Crockpot Pulled Chicken Tacos

Ingredients:

1 lb. Boneless Skinless Chicken Breast

1 can Diced Tomatoes or Rotel

½ cup Diced Onion

1 oz Taco Seasoning

Toppings (optional): Tortillas, Sour Cream (or plain non-fat Greek yogurt), Salsa, Shredded Lettuce, Bell Peppers, Cheddar Cheese, Hot Sauce, Cilantro, etc.

Directions:

1.     Place chicken breasts in the bottom of the slow cooker. Sprinkle taco seasoning evenly over the chicken. Top with diced onion and then pour tomatoes over the top. Cook on low for 6-8 hours or on high for 3-4 hours.

2.     Remove lid from slow cooker and shred chicken with 2 forks. Serve with tortillas and desired toppings or over rice for a burrito bowl.
