Blackened Mahi with Avocado Mango Salsa

(Entire recipe = 2 servings)

Ingredients:

2 (6 oz) Mahi Mahi Filets

1 Roma Tomato (diced) 

½ cup Mango (diced)

1 medium Avocado

¼ cup Cilantro

1 Lime (juiced)

Blackening Seasoning:

-       2 tsp Smoked Paprika

-       1 tsp Garlic Powder

-       1 tsp Onion Powder

-       1 tsp Salt

-       1 tsp Pepper

-       1 tsp Cayenne (or to taste)

-       ½ tsp Oregano

-       ½ tsp Thyme

-       ½ tsp Basil

 Directions:

1.    Cut tomato, mango, avocado, and cilantro. Add to a bowl with lime juice, stir, and refrigerate.

2.    Mix all blackening spices together.

3.    Coat all sides of the fish in blackening seasoning.

4.    Heat a non-stick pan to medium heat and lightly spray with cooking oil.

5.    Once heated, add fish to the pan and sear on both sides (about 4-6 minutes per side). Internal temperature should be at least 145 ° F.

6.    Plate and top with chilled salsa.
