Italian Chicken Meatballs

My personal favorite way to serve these chicken meatballs is with sweet Thai chili sauce, a side of brown rice, and veggies as a meal prep option. However, they can be used in so many different meals! They are also a great, higher protein substitute for traditional style meatballs served with spaghetti.

Ingredients:

1 lb. Ground Chicken

½ cup Breadcrumbs

¼ cup Parmesan Cheese

1 Large Egg

½ Tbsp Minced Garlic

1.5 Tbsp Chili Powder

1.5 Tbsp Italian Seasoning

½ tsp Salt

¼ tsp Paprika

¼ tsp Cayenne

¼ tsp Onion Powder

Directions:

1.    Preheat oven to 400 °F.

2.    Combine all ingredients in a large bowl and mix well.

3.    Line a baking sheet with foil and lightly spray with cooking spray.

4.    Form 1.5 - 2” meatballs and place on baking sheet. (Should yield 16 meatballs).

5.    Bake 18-20 minutes (until internal temperature is 165 °F).
