Honey Sriracha Meatballs

These Honey Sriracha Meatballs are my favorite recipe to use for meal preps. They are easy, reheat well, and taste AMAZING!
Ingredients:
For the Meatballs:
1 lb Ground Turkey or Chicken
½ C Panko Breadcrumbs
1 egg
½ tsp Garlic Powder
½ tsp Salt
½ tsp Pepper
4 Tbsp Green Onions (chopped)
For the Sauce:
2 Tbsp Sriracha (more or less depending how spicy you want them)
1.5 Tbsp Low Sodium Soy Sauce
1.5 Tbsp Rice Wine Vinegar
1.5 Tbsp Honey
1 tsp Ground Ginger
2 Cloves Garlic (minced)
½ tsp Sesame Oil
Directions:
1. Preheat oven to 375 degrees F.
2. In a large bowl, mix together turkey, breadcrumbs, eggs, garlic powder, salt and pepper, and green onions until well combined. Shape mixture into 1 1/2-inch balls (you’ll make roughly 20 balls) and place spaced apart on prepared baking sheets lightly sprayed with cooking spray.
3. Bake meatballs for 20 to 25 minutes, or until browned and cooked through.
4. While the meatballs are baking, combine all the ingredients for the sauce in a small saucepan and bring to a boil over medium heat, whisking continuously. Reduce heat and simmer for 8 to 10 minutes (the sauce will start to thicken) then toss with the meatballs.
5. For a higher carb option, serve over brown rice. For a lower calorie/carb option, serve with salad topped with shredded carrots and ginger dressing.
If your meatballs are larger or smaller than the suggested 1.5”, the serving size will be different. Please adjust macro calculations accordingly.
