Sheet Pan Shrimp Fajitas

(Entire recipe = 4 servings) 

Ingredients:

1 lb. Shrimp – Peeled & Deveined 

3 Bell Peppers (thinly sliced) 

½ White Onion (thinly sliced) 

2 Tbsp Olive Oil 

1 Packet McCormick Fajita Seasoning 

Directions:

1.    Preheat oven to 400 °F. 

2.    In a large bowl, combine shrimp, bell peppers, onion, olive oil, and fajita seasoning. Mix well until seasoning is evenly distributed. 

3.    Spread everything out onto a baking sheet. 

4.    Bake for 10-15 minutes until shrimp is pink (minimum internal temp of 145 °F) and peppers and onions are tender. 

Serve with tortillas or over rice
