Low Calorie Blueberry Compote

This low-calorie blueberry compote is the perfect topping for pancakes, overnight oats, and more! It uses Swerve - Confectioner’s Sugar Replacement to cut back on the sugar and calories, but the citrus flavor from the lemon juice helps mask the typical “artificial sweetener taste”. Since the confectioner’s sugar replacement is calorie free, this compote is only about 110 calories (and 25 grams of carbs) for the entire recipe!

Ingredients:

1 1/4 C Fresh Blueberries

1/4 C Water

1/4 C Swerve Confectioners Sugar Substitute

1/2 Tbsp Lemon Juice

Zest of 1/2 an orange

Directions:

1.     Combine all ingredients in a saucepan over medium heat.

2.     Stir until berries break down, about 5-10 minutes. Lightly smash blueberries for a thinner sauce

3.     Transfer sauce to a glass container and allow to cool before serving.

4.     Use as a topping for overnight oats, Greek yogurt, protein pancakes, and more!
