Deconstructed Burger Bowls

Ingredients:
For The Deconstructed Burger:
1 lb 93/7 lean ground beef
1 tsp paprika
½ tsp garlic powder
½ tsp onion powder
¼ tsp oregano
kosher salt & black pepper to taste
cayenne optional, to taste
For The Base:
12 oz baby potatoes, halved or quartered
1/2 Tbsp avocado oil
Kosher salt and black pepper to taste
For The Toppings:
1 cup romaine lettuce, chopped
1 cup cherry tomatoes, halved or quartered
1/2 raw red onion, sliced
1/2 cup shredded cheddar cheese
For The Sauce:
¼ cup light mayo
½ cup sugar free ketchup
2 tbsp mustard
½ tsp paprika, garlic powder, onion powder
¼ tsp salt
⅛ tsp. white wine vinegar (optional for more of a “bite”)
Directions:
Preheat the oven to 425F.
Add baby potatoes to a mixing bowl. Drizzle avocado oil and season with kosher salt & black pepper to taste. Toss to coat.
Evenly spread the potatoes out on baking sheet. Bake for 30-40 minutes, or until potatoes are golden and crispy.
While the potatoes are cooking, bring a large pan to medium heat.
Once heated, spray with non-stick spray. Add the ground beef and break apart into small pieces.
In a small bowl, mix together all the seasonings, salt and pepper. Add to the beef and continue to stir until cooked to a minimum internal temperature of 165°F. Remove from heat.
For the sauce, in a small bowl, mix together mayo, ketchup, mustard, paprika, salt, and vinegar. Stir until combined.
Assemble your burger bowls. Start with a base of baby potatoes, next add ground beef, and top with lettuce, cherry tomatoes, shredded cheddar cheese, and raw red onions. Top it off with a drizzle of special sauce and enjoy!
