Caprese Chicken

Caprese Chicken

350 kcal, 45 g P, 11 g C, 14 g F (per serving)

(Entire recipe = 4 servings)

 

Ingredients:

4 (6 oz) Boneless Skinless Chicken Breasts

1 tsp Italian Seasoning

½ tsp Garlic Powder

½ tsp Onion Powder

Salt and Pepper (to taste)

4 (2 oz) Slices of Fresh Mozzarella Cheese

1 Roma Tomato (sliced)

2 Tbsp Fresh Basil (Sliced)

½ cup Balsamic Vinegar

2 Tbsp Brown Sugar  

Directions:

1.    Wrap chicken in parchment paper and pound until each chicken breast is about 1” thick. Set aside for later

2.    Combine Italian seasoning, garlic powder, onion powder, salt, and pepper in a small bowl. Sprinkle seasoning blend on both sides of chicken.

3.    Heat a grill (or grill pan) to medium-high heat.

4.    Place seasoned chicken breast on grill (or grill pan) and cook 5-6 minutes per side.

5.    While the chicken is cooking, heat a small saucepan to medium-low heat. Add balsamic vinegar and brown sugar. Simmer for about 10 minutes, until sauce is reduced, stirring frequently. Keep sauce warm until ready to use.

6.    Add Mozzarella to each chicken breast and continue to cook another 3-5 minutes (until internal temperature reaches 165 °F and cheese is melted).

7.    Plate chicken and top with a slice of tomato, fresh basil, and balsamic reduction.
